Middle-Eastern Spice Rub Recipe is a wonderful way to infuse flavor into meats without adding fat.
2 teaspoons ground, black pepper
1-1/2 teaspoons ground cumin
1 teaspoon (each) ground coriander and salt
1/2 teaspoon ground cardamom
1/4 teaspoon ground cloves
Combine the above ingredients together for a spice "rub" with Middle-Eastern flair that can be added to beef, pork, lamb or chicken.
To use, simply cover your trimmed meat with the mix and then grill, broil or roast.
Note: Spice rub makes a great gift to any barbecue-enthusiast on your gift list. Simply mix up a batch of signature spices in a sterilized glass jar and seal tightly. Having a jar on hand can allow you to add extra flavor at a moment’s notice and is excellent for frequent entertainers.
