Palomino Cranberry Sauce

Cranberry Sauce

A refreshing version of Palomino Cranberry Sauce using whole berry cranberry sauce, apricots and healthful herbs - oh ,and a nice kick from hot pepper sauce!


1 16-ounce can whole berry cranberry sauce
1 plum tomato, seeded and chopped
1/4 cup diced dried apricots
1-1/4 teaspoon cinnamon
1/2 teaspoon ground ginger
1 teaspoon dried cilantro
1 teaspoon hot pepper sauce
1/2 teaspoon black pepper


Combine all ingredients in a medium saucepan.

Cook until heated through. Keep warm until serving time.

Bring ingredients to a boil over a medium high heat, stirring often to keep from burning.

Serving Suggestion: Saute, broil, bake or grill 6 boneless, skinless chicken breast halves. Top with one-quarter cup of the cranberry sauce.

Traditional Palomino Sauce is made with tomatoes in a cream based sauce with a little extra zip. It is commonly served in Italian restaurants. It's a delicious sauce that goes well with pasta dishes. This version replaces the tomatoes with cranberries and complements them accordingly. Sometimes we all need a bit of variety and this is really good, especially for those who enjoy a little "kick" in their sauces.
