Rich Island Chocolate Sauce

Ingredients:
4 tablespoons unsweetened cocoa powder
1 cup powdered sugar
3/4 cup granulated sugar
1/2 cup whipping cream
1/2 stick unsalted butter
1/4 teaspoon vanilla extract
Dash salt

Sift powdered sugar into medium bowl. Place next 3 ingredients in medium saucepan over med-low heat until butter melts and sugar dissolves. Turn heat to med-high and boil for 3 minutes, stirring occasionally.

Remove from heat and stir in cocoa powder a with a whisk until smooth. Cool about 15 minutes until thickened and it falls heavily from a spoon.

Drip icing thickly over top and sides of rum cake and let stand until icing is firm.
