Cabbage-Orange Slaw

Ingredients:
3 large oranges
1-2/3 cup shredded cabbage
2 tablespoons finely chopped celery
2 tablespoons chopped fresh parsley
2 tablespoons raisins (optional)
1/4 cup light mayonnaise
2 tablespoons skim milk
1 teaspoon vinegar
1/4 teaspoon salt
1/4 teaspoon sugar

Cut each orange in half crosswise; gently remove pulp, leaving shells intact. Remove membrane from orange pulp; drain off juice.

Combine orange sections, cabbage, celery and parsley; add raisins if using. Combine remaining ingredients, mixing well. Pour dressing over cabbage mixture, stirring gently until well mixed. Fill orange shells with slaw and chill. Recipe serves six.

NOTE: Edges of orange shells may be scalloped or notched, if desired.
