Healthy Appetizer/Snack Recipe

Enjoy this low fat garden fresh appetizer. It is also low in saturated fat and naturally cholesterol free.

Ingredients:
1 loaf French bread or baguette, cut into 1-inch slices
1 cup prepared Italian salad dressing Mix for Fat Free Dressing
4 medium tomatoes, chopped
6 green onions, sliced

Directions

Place bread slices on cookie sheet. Broil 2 minutes on each side or until golden brown on both sides.

Brush 1 side of toasted bread slices with dressing; sprinkle with chopped vegetables.

Recipe makes 24 servings.

BONUS: Bruschetta Variation

Cut one 18-inch loaf of French bread into 36 (one-half thick) slices; place in single layer on baking sheet. Broil one to two minutes on each side or until golden brown on both sides.

Mix one pound chopped plum tomatoes, one-quarter cup chopped fresh basil and 2 sliced green onions in medium bowl. Add 1/3 cup Italian dressing; mix lightly.

Spoon tomato mixture evenly over toast slices. Sprinkle with grated Parmesan cheese. Makes 36 servings, 1 topped toast slice each.
