Rice and Cheese Puffs Recipe

Healthy Appetizer/Snack Recipe

Ingredients:
2 egg whites
1 cup cooked white or brown rice
1/8 teaspoon poultry seasoning
1/2 cup freshly grated Parmesan cheese
1/3 cup dry bread crumbs
Nonstick spray

Directions

Preheat oven to 400 degrees.

Coat a baking sheet with nonstick spray.

Beat egg whites; stir in rice, poultry seasoning and cheese. Refrigerate at least an hour.

Shape rice mixture into 15 balls, about 1 inch each. Roll in dry bread crumbs. Place on prepared baking sheet and coat each ball completely with nonstick spray.

Bake 15 to 18 minutes, until puffs are golden brown.

Recipe makes 5 servings, 3 puffs each.

261 milligrams sodium
16 grams carbohydrates
7 grams protein
1 gram fiber.
