A tasty snack or hors d'oeuvre. You can make the Caraway Cheese Sticks dough ahead of time and bake them fresh as needed.
1 cup unsalted butter at room temperature
1/2 pound shredded Cheddar cheese
1/4 teaspoon cayenne pepper
2 cups sifted all purpose flour
1/2 teaspoon salt
2 tablespoons caraway seed
1-1/2 teaspoons dry mustard 1 egg beaten with 1 tablespoon water
1 ounce grated Parmesan cheese (about 2 tablespoons)
In a large bowl, cream the butter and Cheddar cheese with an electric mixer. Beat in the cayenne pepper, flour, salt, caraway seed, and dry mustard. Shape the dough into a flat patty, cover with plastic wrap or aluminum foil, and chill for 2 hours. At this point the dough can be kept 1 week refrigerated, 6 months at 0 degrees.
Preheat the oven to 350 degrees. On a lightly floured surface, roll out the dough 1/4 inch thick. Using a sharp knife, cut into 5 x 1/2 inch strips. On an ungreased baking sheet, place the strips ½ inch apart. Brush each strip with the egg wash, then sprinkle with the grated Parmesan cheese.
Bake 10 to 12 minutes or until golden brown and crisp. Let the sticks cool 1 minute, then transfer to a wire rack. Will keep 2 days in an airtight container.
