A flavorful snack of healthful Cheese Crackers to keep on hand for unexpected guests. A bit of cayenne pepper lends a little zing to these tasty treats.
1 cup unsalted butter at room temperature
1/2 pound shredded Cheddar cheese
2 cups sifted all purpose flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 egg beaten with 1 tablespoon water
In a large bowl, cream the butter and cheese with an electric mixer. Beat in the flour, salt and cayenne pepper. Shape the dough into a flat patty, cover with plastic wrap, and chill for 2 hours. (At this point the dough can be kept 3 or 4 days refrigerated, 6 months at 0 degrees.)
Preheat the oven to 350 degrees. On a lightly floured surface, roll out the dough 1/4-inch thick. Cut into any desired shape (a 2-1/2-inch biscuit cutter works well). Or use Christmas cookie cutters. Place on ungreased baking sheets and brush each cracker with the egg wash.
Bake 10 to 12 minutes or until the crackers are crisp and golden. Let the crackers cool for 1 minute on the baking sheet, then transfer to a rack. Will keep up to 2 weeks in an airight container.
Recipe makes 4-1/2 dozen (2-1/2 inch crackers).
