If you have never tried a fruit soup, this tasty Fat Free Chilled Peach Soup may convince you to enjoy them more! Great for summertime meals or as refreshment.
3 cups peach puree (directions below)
1 tablespoon white sugar
2 tablespoons brown sugar
2 tablespoons honey
2 cups fat-free half-and-half
6 tablespoons peach liqueur (optional)
1 cup diced peaches
1/4 cup club soda
Sliced peaches for garnish, optional
Mint for garnish, optional
To make the peach puree, take approximately 4 large peaches (more if they are small) and skin by dropping briefly into boiling water (5 to 10 seconds, depending on ripeness of the peaches) until the skin peels off easily. Coarsely chop the peeled peaches and place in a food processor fitted with a steel blade, or in a blender. Process until smooth.
Pour the puree into a large bowl. Add the sugars, honey, fat-free half-and-half and peach liqueur, and mix well. Stir in the diced peaches.
Just before serving, stir in the club soda.
Garnish with peach slices and mint sprigs, if desired.
