Escarole Soup Recipe
Healthy Soup Recipe
This Escarole Soup is made especially easy and delicious with the use of packaged tortellini.
Ingredients:
1 onion, diced
4 carrots, chopped
1/4 cup fat free chicken broth
1 medium size head escarole, shredded
4 tomatoes, diced
2 cups fat free chicken broth
1/4 teaspoon white pepper
1 teaspoon oregano
4 cups water
1 9-ounce package tortellini
Directions
In large nonstick saucepan over high heat, cook onions and carrots in broth for 5 minutes or until tender crisp.
Add escarole and cook for 5 minutes, stirring until escarole is wilted.
Stir in tomatoes and cook for 10 minutes, stirring occasionally.
Stir in chicken broth, white pepper, oregano, and water. Over high heat, bring to boil.
Reduce heat to medium and add tortellini. Cook tortellini according to package directions. Stir occasionally. Serve hot.
