Lactose Free Potato Soup is a great way to enjoy a rich, creamy soup without having to worry about the upset that can result in those who suffer lactose intolerance. On top of that benefit, you also have an incredibly healthy, low fat, low calorie potato soup that can actually be settling to the tummy!
3 medium onions, chopped
2 celery ribs, chopped
2 tablespoons olive or vegetable oil
4 cups reduced sodium chicken broth
2 carrots, cubed (optional)
4 medium potatoes, peeled and cubed
In a large saucepan, saute onions and celery in oil until tender. Add broth and potatoes; bring to a boil. Reduce heat; cover and simmer for 15 to 20 minutes or until potatoes are tender. Cool slightly.
In a blender, process half of the soup until smooth. Return to pan; heat through.
Recipe makes 6 servings.
