Lentil Soup and Rice

Lentil Soup

Rice pairs up wonderfully with lentils in this healthy Lentil Soup and Rice made with chicken broth, celery, pepper, onion and prepared rice.

Ingredients

2 cups canned lentils, drained
4 cups fat free chicken broth
3 celery ribs, diced
1/4 cup fat free chicken broth
2 tablespoons flour
1/4 teaspoon pepper
1 small onion, chopped
1/4 cup water
1/2 cup prepared rice

Directions

In large saucepan over high heat, combine lentils, broth and celery. Heat lentils to boiling then reduce heat to low and simmer for 15 minutes, stirring occasionally.

In blender, combine 1/4 cup broth, flour and pepper. Mix on high for 1 minute and set aside.

In large nonstick skillet over high heat, saute onion in 1/4 cup broth for two minutes.

Carefully remove 1 cup of stock from lentils and add to onion mixture. Stir to mix. Reduce heat to low.

Slowly add flour mixture to onion mixture. Stirring constantly using a wire whisk. Heat mixture until thickened.

Add onion mixture to soup and stir well. Add prepared rice just before serving.
