Old Fashioned Bean Soup

Bowl of Old Fashioned Bean Soup

This delicious Old Fashioned Bean Soup recipe uses dry white beans and a smoked ham hock.

Ingredients

1 pound dry white beans
3 quarts water
Smoked ham hocks or meaty ham bone
1 tablespoon minced onion
1/2 cup red beans
1/2 teaspoon celery salt
1/2 teaspoon dry mustard
2 teaspoons salt
4 ounces shell pasta (optional)*
Dash pepper

Directions

Wash beans and soak overnight in water. Do not drain.

Add ham, onion and celery salt. Cook until beans are very soft, 2 to 3 hours. Remove ham and cool.

Remove meat from ham hocks or bone and chop into bite-sized pieces. Slightly mash beans with a slotted spoon.

Add meat, mustard, salt and pepper and reheat. Garnish with parsley if desired and serve.

Recipe Note

*If using shell pasta as an addition, cook the pasta tender first, then add it just before you re-heat the soup. The pasta makes this more of a soup that "eats like a meal"!

Try bean salsas: Prepare a tomato salsa and add cooked beans, such as black beans, baby limas, white beans, or kidney beans. Leave the salsas chunky to add texture.
