Hot! Hot! Hot! This simple Fiery Rice 'n Bean Soup explodes with flavor.
1 package hot chili seasoning mix
2 cups cooked rice
2 14-1/2-ounce cans pinto beans, not drained
2 cups low-sodium-chicken broth
1 14-1/2-ounce can stewed tomatoes
1 cup chopped green onions
Monterey Jack cheese (optional)
In a large saucepan, combine all ingredients. Mix well. Bring to a boil.
Cover and simmer 15 minutes.
Garnish each serving with shredded Monterey Jack cheese, if desired.
