Throughout the Mediterranean, the use of basil, garlic and parsley play an essential role in flavoring hearty vegetable soups. This Savory Minestrone recipe gives you this traditional herb blend in pesto seasoning to add the flavor notes of Province or Genoa to your cooking.
1 cup chopped onion
2 tablespoons pesto seasoning
3 tablespoons olive oil
6 cups chicken broth, divided
1-1/2 cup sliced carrots
1 14-1/2-ounce can diced tomatoes, not drained
1/2 cup uncooked ditalini or other small tube macaroni
1 19-ounce can white beans, not drained
1-1/2 cup chopped zucchini
Grated Parmesan cheese, optional
Cook onion and pesto seasoning in oil in a large saucepan until lightly browned. Add 1-cup broth and carrots; cook 5 minutes.
Add remaining broth and tomatoes; bring to a boil.
Add macaroni; cook 10 minutes. Add beans and zucchini; cook 5 minutes or until macaroni is tender. Serve with grated Parmesan cheese, if desired.
