Yellow squash and young and tender string beans create beans and squash with pine nuts cooked in sesame oil.
1 small yellow squash
1/4 pound young and tender string beans
2 tablespoons pine nuts
2 teaspoons sesame oil*
*Sesame oil is a vegetable oil derived from sesame seeds. It is known in some parts of the world as the "Queen of oils" due to its use in India as a healing oil for thousands of years. Sesame oil is high in antioxidants.
Slice the squash on the bias in 1/4-inch slices.
Cut the larger slices into two pieces on the longer diameter.
Cut the ends off the beans and cut the beans into 2 pieces about 2-1/2-inches long.
Toast the pine nuts in a heavy frying pan over medium heat, stirring constantly, until golden; set aside.
Put the sesame oil into the hot frying pan.
Add the green beans and stir-fry for about 1 minute; add the squash and stir-fry until crisp-tender.
Put into serving dish and top with the pine nuts.
Recipe makes 3 servings.
