Healthy Vegetable Recipe

Light sour cream and non fat milk make this delicious onion side dish fit for all your festivities.

Ingredients:

2 tablespoons butter
4 cups sliced onions (about 2 medium onions)
1 whole egg
2 egg whites
1/2 cup non fat milk
1/2 cup light sour cream
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese

Directions

Onions Preheat oven to 425 degrees. Heat butter in a skillet over medium heat; add onions and cook until transparent. Put onions in a 1 1/2-quart baking dish. Whisk egg, egg whites, milk, sour cream, salt and pepper together until smooth.

Pour custard mixture over onions. Sprinkle Parmesan cheese over the top.

Bake uncovered for 15 to 20 minutes until center does not jiggle and top is golden.

Recipe makes 6 servings Festive Light Onions, 1/2 cup each.

Each serving contains approximately:
145 calories, 8 grams fat, 54 milligrams cholesterol, 331 milligrams sodium, 11 grams carbohydrates, 8 grams protein and 2 grams fiber.
