Garlic Guacamole gives traditional guacamole a tasty zing with the addition of garlic and seasonings.
Homemade guacamole is a colorful garnish for nearly all south-of-the border entrees. It also stands on its own as a dip that is ideal for vegetables or tortilla chips. To make guacamole, start with a ripe avocado that has been pitted and peeled.
1 ripe avocado
1/8 pound tofu, firm style
6 large cloves fresh garlic
1/2 medium size sweet bell pepper
2 green onions
2 tablespoons freshly chopped parsley
1/2 teaspoon curry powder
1/2 teaspoon oregano
1/2 teaspoon thyme
1/4 teaspoon freshly ground black pepper
4 tablespoons hot sauce
Juice of 1/2 lime or lemon
Tortilla chips for dipping
Mash avocado and tofu in bowl.
Squeeze garlic through press and add finely chop bell pepper and green onion and stir in.
Add herbs and spices. Mix well. Add hot sauce. Stir in lime juice.
Eat with tortilla chips, vegetable crackers, vegetables etc. Garlic Guacamole can be refrigerated, but do not make more than a few hours in advance.
Recipe Tips and Variations
Mash avocados coarsely with a fork or wire whisk. Mix in the juice of half a lime, minced garlic, cilantro, salt and, if desired, hot sauce. For an even quicker version, mix the mashed avocado and lime juice, then stir in prepared salsa.
