Mockamole Recipe
Healthy Vegetable Recipe
Mockamole is a mock guacamole made with green picked soybeans instead of the traditional version.
Ingredients:
2 cups green picked soybeans - steamed
1 teaspoon lemon juice
1/2 cup tomatoes - peeled and chopped
4 tablespoons canned jalapeno chilies - chopped
2 tablespoons onion - diced
2 teaspoons horseradish sauce
2 teaspoons parsley flakes
1 clove of garlic - minced
Salt and pepper to taste
Directions
Mash green soybeans.
Blend with the rest of the ingredients.
Serve with low fat tortilla chips.
