Ingredients: 8 slices light Canadian bacon 8 slices whole grain bread, toasted 4 tablespoons low-fat mayonnaise 4 red leaf lettuce leaves 8 tomato slices Directions: In a nonstick skillet, cook Canadian bacon over medium-high heat until brown and crisp. Spread a half a tablespoon mayonnaise on each slice of toast and place lettuce leaf on four slices of the slices. Top lettuce with two slices of bacon and two slices of tomato.
