Ingredients: 1-1/2 cups all-purpose flour 1-1/2 teaspoons baking powder 1 teaspoon ground cinnamon 1/2 teaspoon baking soda 2 cups peeled, chopped baking apples 3/4 cup sugar 2 tablespoons margarine, melted 1/4 cup egg substitute 1 cup fresh cranberries 1/2 cup walnuts, chopped (optional) Directions: Mix flour, baking powder, cinnamon and baking soda; set aside. Mix apples, sugar and margarine in bowl. Stir in egg substitute. Add flour mixture; stir just until moistened. Batter will be thick. Stir in cranberries and walnuts, if using. Spread batter into greased 8-1/2 x 4-1/2 x 2-1/2-inch loaf pan. Bake at 350-degrees for one hour or until done. Let stand in pan ten minutes. Remove from pan to cooling rack. Yield: 12 servings.
