Cranberry-Oat Bread Ingredients: 2-1/2 cups all purpose flour 3/4 cup rolled oats (regular or quick cooking) 1/2 cup sugar 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 cups lowfat buttermilk 2 egg whites 1 teaspoon vanilla 1 cup fresh or frozen cranberries, thawed Non stick cooking spray Directions: Preheat oven to 350-degrees. In a large bowl, combine flour, oats, sugar, baking powder, baking soda, and salt. Mix well with a fork, make a well in the center and set aside. Whisk together buttermilk, egg whites and vanilla. Fold mixture into dry ingredients until just blended. Fold in cranberries. Pour batter into an 8 - inch loaf pan that has been coated with non stick cooking spray. Bake 50 - 55 minutes, until a knife inserted near the center comes out almost clean. Cool in pan, on a wire rack, ten minutes. Remove from pan and cool completely. Yield: 1 loaf.
