Mock Chopped Liver 2 Ingredients: 8 ounces dried brown lentils 2 tablespoons olive oil 1 large Vidalia onion, chopped Salt and pepper to taste 3 hard cooked eggs Garlic, chopped - to taste (optional) Directions: Cook lentils in boiling water until al dente, adding additional water if needed. Remove from heat and drain excess water. Saute onion in olive oil until soft; add salt and pepper to taste. Combine lentils, onion and eggs in food processor and process until very smooth. Add garlic if desired. Serve on crackers. Recipe makes about six cups.
