Ingredients: 4 cups of fat-free, chicken broth 2 cups cubed cooked chicken breast 2 celery ribs, chopped 2 medium carrots, chopped 1 medium green pepper, chopped 1 medium onion, chopped 1/3 cup uncooked long grain rice 1/4 cup minced fresh cilantro or parsley 1/2 teaspoon dried oregano 1/2 teaspoon salt, optional 1/2 teaspoon pepper 1/4 teaspoon ground cumin 1/8 to 1/4 teaspoon crushed red pepper flakes Directions In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 - 25 minutes or until rice and vegetables are tender. Yield six servings.
