Chicken Salad Chinois
Ingredients:
2 cups chicken, cooked, cut up
1/2 cup zucchini, chopped
1/2 cup radishes, chopped
1/4 cup 2-percent yogurt
1 tablespoon soy sauce
1/2-teaspoon bulk granulated artificial sweetener, like Sugar Twin
1/2 teaspoon ginger, ground
3 cups Lettuce, shredded

Directions:
In a bowl, combine chicken, zucchini, and radishes.
In a cup, combine yogurt, soy sauce, sweetener and ginger.
Pour over chicken mixture to coat evenly.
Refrigerate at least two hours before serving, then toss well gently. Divide into four portions.

Recipe makes 5 cups, four servings.
