Cranberry Turkey Casserole
Ingredients:
2 cups cooked turkey breast, cut into one-half inch cubes
1 cup onion, finely diced
1 teaspoon thyme
1/2 cup jellied cranberry sauce
1 cup baking mix
1 cup skim milk
2 eggs or egg substitute equal to two eggs

Directions:
Preheat oven to 400 degrees.
Combine turkey, onion and thyme.

Spread evenly on bottom of pan.

Break up cranberry sauce with a fork until smooth.

Spoon by teaspoonfuls randomly over turkey.

Combine baking mix, milk and eggs in a blender. Blend on high speed for one minute. Pour over casserole.

Bake for 30 minutes or until toothpick inserted into the center comes out clean.

Recipe makes eight to ten servings.
