Three Bean Tuscan Tuna Salad Ingredients: 1 can (15 to 16 ounces) fava or lima beans, rinsed and drained 1 can (15 to 16 ounces) cranberry (Roman) beans or cannelloni beans, rinsed and drained One can (8 ounces) cut green beans, drained 1 medium red onion, diced (about 1-1/2 cups) 1/2 cup bottled Italian red wine or balsamic vinaigrette Freshly ground black pepper 1 can (12 ounces) solid pack white tuna in water or oil, drained Directions In a mixing bowl, combine three beans and onion. Add vinaigrette and toss to blend. Season with pepper. Add tuna and toss gently, but without breaking up pieces of tuna too much. Recipe serves six.
