Baked Breakfast Apples

Wait until you smell the aroma of baked apples wafting through the house! Baked Breakfast Apples were popular during the Great Depression era as they were inexpensive, healthy and oh-so-good!


2 medium apples
1/2 cup apple juice
2 tablespoons snipped, pitted whole dates
1 tablespoon of raspberry spreadable fruit
1/4 teaspoon of ground cinnamon
1/4 cup low-fat granola cereal


Chop the apples into bite-sized pieces, then combine the apple pieces and dates in two individual casseroles and sprinkle the cinnamon over them.

Pour half the apple juice over each apple mixture.

Bake, covered, in at 350 degree oven about twenty minutes or until the apples are slightly tender.

Stir spreadable fruit and dollop on top of the apple mixture.

Sprinkle with granola and serve warm.

Variation: Microwave Baked Breakfast Apples

Baked apples are always a wonderful fall treat but apples take a while to bake so when time is short, use this microwave version instead.

2 medium apples
4 tablespoons favorite fruit preserves
2 tablespoons apple juice

Pare top third of apple; core. Arrange apples in microwave-safe baking dish; fill centers with preserves.Pour juice in bottom of dish; cover with vented plastic wrap or lid. Microcook at HIGH 4 to 5 minutes or until apples are tender. Makes 4 servings.

Did you know?

Nutritionally there is no difference between "natural" and "regular" apple juice, even the fiber content is the same.
