Quick Beef Casserole

Ground Beef for Quick Beef Casserole

Try this quick casserole dish for a hearty and healthy ground beef casserole dish packed with vegetables! Includes onions, celery, bell peppers, tomatoes, peas and carrots.


1/2 pound lean ground beef
1 cup chopped onion
1 cup chopped celery
1 cup cubed green bell pepper
3-1/2 cups diced tomatoes
1/4 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 cup frozen peas
2 carrots, diced
1 cup uncooked rice
1-1/2 cup water


In skillet, brown ground beef and drain off fat.

Add rest of ingredients. Mix well. Cover and cook over medium heat until boiling.

Reduce to low heat and simmer for 35 minutes. Serve hot.
