Frosted Black Coffee is made up with three simple ingredients - cold coffee, cracked ice and vanilla ice cream.
1/4 pint extra strong cold coffee
2 tablespoons cracked ice
1 scoop vanilla ice cream
Pour the coffee into a cocktail shaker with the ice.
Add the ice cream and shake vigorously.
Pour into a tall glass and serve with a dollop of whipped cream, if desired.
Note: Use light or non-fat ice cream if you're watching your weight. Frozen Yogurt will work, as well.

Quick Low Fat Vanilla Ice Cream
Want to try your hand (and taste buds) on a low fat, low sugar version of ice cream to use for beverages such as this? There are more complex recipes, of course, but this one is incredibly quick and easy to pull together and works great for inclusion in beverages!
2 teaspoons gelatin dissolved in 2 tablespoons hot water
10 ounces chilled low fat evaporated milk
1 teaspoon vanilla essence
Sugar-free sweetener (equivalent to 4 tablespoons sugar)
Whisk all the ingredients, and pour into freezing trays.
Tips: You can eat the ice cream on its own, or top up your favorite fruit or fruit salad. You can also freeze it in ice cube trays and have little ice cream scoops as snacks.
