Minty Melon Smoothie uses fat free or reduced fat milk with Splenda to keep fat and calories down in this delightful milk beverage. Fresh honeydew melon cubes blend with the milk along with lime juice and large mint leaves. Refreshing and very healthy.
2/3 cup fat free or low fat milk
2 tablespoons sugar
2 tablespoons Splenda
1/4 cup plus 1 tablespoon fresh-squeezed lime juice
1-1/2 cup honeydew melon cubes
14 large mint leaves
Extra mint leaves
Place all ingredients (except extra mint leaves) in a blender and whip until smooth and creamy.
Pour into a glass, garnish with extra mint leaves, and serve immediately.
Recipe makes 2 servings.
