Whole Wheat Cran-Apple Bread

Whole Wheat Cran-Apple Bread with cranberries and apples spiced with allspice, cloves, ginger and cinnamon. Sweetened with honey.


4 cups whole wheat flour
4 teaspoons baking powder
1 teaspoon allspice
1 teaspoon cloves
1 teaspoon ginger
1 teaspoon cinnamon
2 tablespoons cornstarch
1 cup skim milk
1-1/4 cup applesauce
1/4 cup honey
8 ounces cranberries (thawed if frozen)
2 medium tart apples, cored and diced


Preheat oven to 350 degrees.

Spray a loaf pan (8x4 or 9x5-inch) with nonstick cooking spray. Combine dry ingredients and mix well. Combine skim milk, applesauce and honey and mix well. Add wet ingredients to the dry ingredients and stir just until combined.

Gently fold in cranberries and apples. Pour into the prepared pan. Bake for 50 or 60 minutes or until an inserted toothpick comes out clean.
