Mango Quick Bread

Fresh mango fruit in Mango Quick Bread

A truly delectable and unique Mango Quick Bread with cinnamon spice and juicy raisins complementing sweet fresh mango.


2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
1-1/4 cups white sugar
2 eggs
3/4 cup vegetable oil
2-1/2 cups mangos, peeled, seeded and chopped
1 teaspoon lemon juice
1/4 cup raisins


Combine all of the dry ingredients.

Beat eggs with oil and add to flour mixture. Add mangoes, lemon and raisins.

Pour into 2 greased 8 x 4 loaf pans. Bake at 350 degrees (325 degrees for glass pans) for about 60 minutes or until toothpick comes out clean.

Cool on wire racks.

Recipe makes two 8 x 4-inch loaves.
