Strawberry Bread

Fresh strawberries for Strawberry Bread

Strawberry bread, spiced with cinnamon, a nice crunch from pecans - a bread you'll want to keep on hand.


3 cups all-purpose flour
2 cups white sugar
1 teaspoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
4 eggs
1-1/4 cups vegetable oil
1 cup chopped pecans
1 10-ounce package frozen strawberries, thawed


Preheat oven to 350 degrees.

Grease and flour a 9 x 5 inch pan well.

In a large mixing bowl, sift together sugar, flour, cinnamon, salt, and baking soda.

In a smaller bowl, beat the eggs and oil. Stir in pecans and strawberries.

Add egg mixture to the the sifted ingredients, and stir until just combined.

Bake for 1 hour, or until tester inserted in the center comes out clean.

Recipe makes 1 9-inch loaf.
