Gingerbread Cake

This Gingerbread Cake tastes very much like old fashioned gingerbread with its cinnamon, ginger and molasses.


1 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup non-fat buttermilk
1/2 cup applesauce
1/2 cup molasses
2 egg whites
Powdered sugar for dusting


Preheat oven to 350-degrees. Lightly coat 8 x 2 x 2-inch baking pan with nonstick cooking spray.

In a large bowl, combine flours, brown sugar, cinnamon, ginger, baking powder and baking soda.

In a small bowl, combine buttermilk, applesauce, molasses and egg whites; add to flour mixture. Beat until combined.

Pour into baking pan and bake 30 to 35 minutes.

Cool for ten minutes, cut Gingerbread Cake into nine squares and dust with powdered sugar.
