Traditional Rice Cakes are usually made from brown rice, which is sometimes mixed with wild rice, corn, or sesame seed. These Sweet Rice Cake snacks are mild and do not have a strong, intense taste. They are popular because they can be part of a reduced calorie and gluten free diet.
3 heaping tablespoons rice flour
1 cup warm water
1 tablespoon skim soy milk
Water - enough to make a soft dough in a bowl
Artificial sweetener or sugar or honey dribbled on top
1 heaping tablespoon of yogurt
Mixed rice flour, milk, water to a soft dough and microwave for one minute.
Top with cold yogurt and honey or sweetener sprinkled on top.
Eat Sweet Rice Cake immediately!

Mini Rice Cakes
1/2 cup pineapple yogurt spread
Assorted fruit, cut-up into small pieces
Spread teaspoonful of yogurt spread on each rice cake; top with fruit. Serve immediately.
