Applesauce in Applesauce Spice Cake

Applesauce Spice Cake has spices of cinnamon, cloves and ginger with applesauce and molasses lend plenty of flavor to this fantastic fall cake.


1/2 cup molasses
1 cup applesauce
1 teaspoon ground cinnamon
1/2 teaspoon cloves
1 teaspoon baking powder
1/2 teaspoon baking soda
1-3/4 cup flour
2 teaspoons ginger


Combine the molasses and applesauce in a large bowl. Combine remaining ingredients and stir into the liquid. (If the batter seems very dry, add a little more applesauce or a little water.)

Bake in a nonstick or pan-sprayed 8 x 8-inch baking pan, in a 350-degree oven, for 30-45 minutes or until it tests done.

Notes: The optional ginger makes an acceptable gingerbread. You can leave out the ginger and add 3 or 4-tablespoons of cocoa for a chocolate cake. Depending on personal taste, you may wish to add additional sweetener if you try the chocolate version.

Variation: No Egg Applesauce Spice Cake

No Egg Applesauce Spice Cake with Raisins

1 cup sugar
1/4 teaspoon salt
1/2 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup unsweetened apple sauce
1/2 cup butter
1 tablespoon strong cold coffee
1 cup raisins
2 teaspoons baking powder
2 cups all purpose flour

Cream together sugar and butter; add salt, cinnamon, cloves ,nutmeg and raisins. Dissolve baking powder in one-third cup of warm water, then stir in the apple sauce, letting it foam over the contents of the mixing bowl. Beat all thoroughly and add flour. Bake in a 9-inch loaf pan in a moderate oven 45 minutes.
