Sour Cream Cake

Sour Cream Cake with fat free sour cream and egg substitute to keep the fat out. Raisins and cranberries lend fruity healthful sweetness.


5 tablespoons applesauce
1 cup warm water 2/3 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 cup fat free sour cream
Egg substitute for 1 egg, or 2 egg whites
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1-1/2 cup flour
3/4 cup raisins or dried cranberries


Combine first five ingredients and stir until smooth. Break up lumps in baking powder and soda, then whisk into mixture. Stir in flour and raisins until just combined.

Pour into a prepared loaf pan, and bake at 350-degrees for 40-45 minutes. Cool in the pan ten minutes before removing. Freezes well.
