Rhubarb Cake

Rhubarb stalks for Rhubarb Cake

Rhubarb Cake with applesauce and buttermilk to lend moistness to make up for removing the fat, which you will not even notice.


1/2 cup applesauce
1 cup warm water 1/2 cup sugar
1/2 cup brown sugar
1 egg white
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 cup fat free buttermilk
1-1/2 cup chopped rhubarb

Topping: 1/2 cup sugar mixed with 1 teaspoon ground cinnamon


Cream together applesauce, sugars, and egg. Add flour, salt, vanilla, soda, milk and rhubarb.

Pour into 9 x 13-inch baking pan sprayed with non-stick baking spray.

Top with mixture of sugar and cinnamon. Bake at 325-degrees for 50 minutes.

Variations: Substitute blueberries or apples for the rhubarb, if desired.
