New Potato Cake

While this New Potato Cake uses mashed potatoes for moistness and texture, all you will taste is the delicious cake flavor.


1/4 cup chopped walnuts, toasted
3 large egg whites
1/8 teaspoon cream of tartar
1-1/2 cup sugar, divided use
1/3 cup butter, softened
1-1/2 cup mashed potatoes
1 whole egg
2 cups flour
1/2 cup cocoa
2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup milk
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
Powdered sugar for garnish, optional


Preheat the oven to 350 degrees. Coat a Bundt pan with nonstick cooking spray and set aside. Place the walnuts on a baking tray and place in the preheated oven for 6 to 8 minutes, or until golden brown. Watch them carefully, as they burn easily.

Place the egg whites and cream of tartar in a large metal or glass bowl and beat with an electric mixer until soft peaks form. Add 1/4 cup of the sugar 1 tablespoon at a time, beating well after each addition. Set aside.

In another bowl, combine the softened butter and the 1 1/4 cups of the remaining sugar, and beat well. Add the mashed potatoes and the whole egg, and beat well. Set aside.

Combine the flour, cocoa, baking powder, cinnamon, allspice, nutmeg and salt in a bowl and mix well. Add the flour mixture to the potato mixture alternately with the milk and vanilla extract.

Fold 1/3 of the beaten egg whites into the batter. Add the nuts and chocolate chips and fold them in, along with the remainder of the beaten egg whites. Spoon the mixture into the prepared Bundt pan and bake for 45 minutes, or until a sharp knife inserted in the center of the cake comes out clean. Cool for 10 minutes in the pan, turn out onto a rack and cool completely. A dusting of powdered sugar adds a nice touch, if desired.
