Chicken Salad

Diced Chicken for Chicken Salad

Chicken Salad with a seasoned dressing, cooked rice, diced apple, celery and raisins.


3/4 cup mayonnaise
1 tablespoon grated onion
1/2 teaspoon curry powder
1/8 teaspoon black pepper
1 cup cooked rice
1/2 cup diced apple
1/2 can (11 ounces) Mandarin oranges, drained
1/4 cup sliced celery
1/4 cup raisins
2 cups cooked chicken, cubed


In a medium bowl, combine mayonnaise, onion, curry and pepper. Mix until combined.

Add remaining ingredients and toss to coat well.

Add additional mayonnaise as needed.

Recipe makes 4 cups.

Simpler Chicken Salad

3-1/4 cup chicken, cooked, cubed, skinless
1/4 cup celery, chopped
1 tablespoon lemon juice
1/2 teaspoon onion powder
1/8 teaspoon salt*
3 tablespoons mayonnaise, lowfat

*Reduce sodium by removing the 1/8 teaspoon of added salt.

Bake chicken, cut into cubes, and refrigerate. In large bowl, combine rest of ingredients, add chilled chicken and mix well.
