Pepper Pineapple Pita Pizza

Fresh Pineapple for Pepper Pineapple Pita Pizza

Pepper Pineapple Pita Pizza with whole wheat pita bread topped with bell pepper, pineapple, cheese, sauce and oregano.


1 whole wheat pita bread
1/4 cup red or green bell pepper, chopped
1/4 cup pineapple chunks, drained
1/4 cup shredded cheese
1 tablespoon spaghetti sauce or tomato paste
Sprinke of oregano


Spread tomato sauce on pita.

Top with peppers, pineapple and cheese. Sprinkle with oregano.

Heat in toaster oven or regular oven for 5 minutes at 400 degrees.

Recipe makes 1 pita pizza.

Bonus Recipe: Pineapple Sauce

1 large pineapple (about 4 pounds) & 1/2 cup sugar

Peel, core and chop the pineapple. Reserve about two cups. In food processor fitted with metal blade or in blender, puree remaining pineapple in batches. In medium saucepan, bring pureed pineapple and sugar to a boil over medium heat. Simmer, stirring occasionally, five minutes. Strain puree through sieve, pressing firmly to extract all the liquid. Skim off the froth and discard. Add reserved pineapple to strained liquid. Cover and chill. Serve cold. Recipe makes about 3 cups.
