Greatest Cornflake Cookies

Greatest Cornflake Cookies crumbs

Cornflakes can make a nice, crunchy addition to these Greatest Cornflake Cookies, especially if you or a loved on isn't fond of nuts.


2 cups unbleached flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter
1/2 cup sugar
1 cup firmly packed brown sugar
1/2 cup low-fat buttermilk
1 whole egg
2 egg whites
1-1/2 teaspoon vanilla extract
1/2 cup flaked coconut
1 cup rolled oats
5 cups cornflakes crushed to 2 cups


Preheat oven to 350 degrees. In a medium mixing bowl, whisk together flour, baking soda, baking powder and salt. In a separate bowl, cream together butter, sugar and brown sugar. Add buttermilk, egg, egg whites and vanilla.

Add dry ingredients to creamed mixture; mix well. Stir in coconut, oats and cornflakes. Drop by rounded tablespoonfuls on ungreased baking sheet 1-1/2 inches apart. Bake for 10 to 12 minutes until lightly browned. Cool on wire rack.

Note: If you're not a coconut fan, simply omit the flaked coconut.
