Take a Baby Ruth candy bar and using this recipe, turn it into a batch of equally as tasty Baby Ruth Cookies!
1/4 cup butter
3/4 cup sugar
1/4 cup low-fat buttermilk
2 egg whites
1/2 teaspoon vanilla extract
1-1/3 cup unbleached all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 2.1-ounce Baby Ruth bar, chopped
1/2 cup cornflakes, slightly crushed
Preheat oven to 350 degrees.
Beat butter and sugar together, then beat in buttermilk, egg whites and vanilla. Combine flour, baking soda and salt and add to batter. Stir in chopped candy bar and cornflakes.
Drop teaspoons of batter 2 inches apart on a sprayed baking sheet. Bake for 10 minutes. Cool on wire rack.
Recipe makes 4 dozen Babe Ruth cookies.
