Pineapple Raisin Cookies

Pineapple in Pineapple Raisin Cookies

Pineapples and raisins pair nicely together making these healthy yet sweet and tasty Pineapple Raisin Cookies.


1/2 cup applesauce
2 cups white flour
1/2 cup brown sugar
1/2 teaspoon vanilla
1/2 cup raisins
1 teaspoon baking soda
1/2 cup crushed pineapple with juice
1 teaspoon baking powder
1 egg white
1/2 teaspoon salt


Preheat oven to 375 degrees.

Cream applesauce and sugar. Add vanilla and egg white. Next add pineapple and raisins.

Sift dry ingredients into creamed mixture. Drop by tablespoonfuls onto greased cookie sheets, or line the sheet with tin foil. Bake for 8 to 10 minutes.
