Vanilla in Sugar Free Baked Vanilla Custard

Sugar Free Baked Vanilla Custard tastes very much like traditional vanilla custard only without the added empty calories of regular sugar. 51 percent calorie reduction from traditional recipe!


1 quart skim milk
6 eggs
6-1/4 teaspoons artificial sweetener or 3/4 cup plus 2 tablespoons spoonable
2 teaspoons vanilla
1/4 teaspoon salt
Ground nutmeg


Heat milk just to boiling in medium saucepan; let cool 5 minutes.

Beat eggs, sweetener, vanilla and salt in large bowl until smooth; gradually beat in hot milk. Pour mixture into 10 custard cups or 1-1/2 quart glass casserole; sprinkle generously with nutmeg.

Place custard cups or casserole in roasting pan, add 1 inch hot water to roasting pan.

Bake, uncovered, in preheated 325 degree oven until sharp knife inserted halfway between center and edge of custard comes out clean, 45 to 60 minutes. Remove custard dishes from roasting pan; cool on wire rack.

Refrigerate until chilled.

Variation: Low Sugar Vanilla Custard Cups

Vanilla custard cups

Vanilla Custard Cups have all the delicious flavor of vanilla, brown sugar and nutmeg in these low fat custard treats.


1 egg OR egg substitute equal to 1 egg (1/4 cup liquid)
1 cup skim milk
3 tablespoons brown sugar
3/4 teaspoon vanilla
1/8 teaspoon ground nutmeg


In a bowl, beat egg, milk, brown sugar and vanilla until blended. Pour into two ungreased 6 ounce custard cups. Sprinkle with nutmeg. Place cups in a 9-inch square-baking pan.

Fill pan with hot water to a depth of 1 inch. Bake, uncovered, at 350 degrees for 30 to 35 minutes or until a knife inserted near the center comes out clean. Recipe makes 2 servings.

Quick Recipe: Just Layer It

Prepare one package vanilla fat-free, sugar-free reduced-calorie pudding and pie filling and spoon into four dessert dishes. Add a few spoonfuls sliced banana (one banana for four). Top with 2-tablespoons thawed light or fat-free whipped topping and coarsely chopped Sugar-Free Chocolate Chip Cookies.
Variation: Use one package prepared strawberry flavor sugar-free gelatin, partially thawed frozen raspberries, whipped topping and chopped Sugar-Free Chocolate Sandwich Cookies.
