Cranberry Vinaigrette

Cranberries for Cranberry Vinaigrette

Whip up this tangy Cranberry Vinaigrette quickly with the use of jellied cranberry sauce and your blender.


1 cup jellied cranberry sauce
2 tablespoons vinegar
1 tablespoon sugar
1/8 teaspoon cardamom
1/2 cup oil


Put all ingredients, except oil, in a blender.

Blend for a few seconds on high speed.

Remove the cap in the center of the blender lid; place lid back on blender.

With the blender running, slowly add oil through the hole in the lid.

Recipe makes 1 cup.

Spiced Cranberry Dip

1 8-ounce package reduced-fat cream cheese
1/2 cup whole berry cranberry sauce
1/4 cup orange marmalade
1/8 teaspoon ground red pepper
1/4 cup toasted slivered almonds

Spread one softened package cream cheese onto bottom of 9-inch pie plate. Mix canned whole berry cranberry sauce, orange marmalade and ground red pepper (cayenne); spoon over cream cheese. Sprinkle with toasted slivered almonds. Serve with your favorite crackers.

Makes 1-3/4 cup or 14 servings, 2 tablespoons each.

Bonus: Cranberry Pear Salad Dressing

1 cup jellied cranberry sauce
1/2 cup diced canned pears, reserving 1/2 cup syrup
1/8 teaspoon ginger

Put all ingredients in a food processor. Process on high for two minutes or until smooth. Recipe makes two cups.
