A pretty tasty and healthy low calorie salad dressing using V8 and wine vinegar.
46 ounces low sodium V8 juice*
1 tablespoon wine vinegar
1/4 teaspoon oregano
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 packet Equal
Mix the ingredients together and chill.
Shake well before using.
*V8 Low Sodium 100 percent Vegetable Juice (140 mg sodium per 8-ounce serving) contains 70 percent less sodium than regular V8 juice. All V8 beverages have at least 100 percent of the Recommended Daily Value of vitamin C.
Recipe makes 2 cups.
Bonus Recipe: Ginger Berry Dip
Another recipe using V-8 - very healthy, very delicious!
1 cup nonfat mayonnaise
1 cup nonfat sour cream
1/2 cup V8 V-Fusion Strawberry Banana 100 percent Juice
2 teaspoons grated fresh ginger root
4 cups fresh vegetables (baby carrots, sliced red peppers, sliced cucumbers)
Stir the mayonnaise, sour cream, juice and ginger root in a medium bowl. Cover the bowl and refrigerate for 1 hour or until ready to serve. Serve with the vegetables.
