Quick Vinaigrette

A quick vinaigrette recipe that is easy to make for those days when time is tight.


1/4 cup wine vinegar
Salt and pepper to taste
3/4 cup extra virgin olive oil


In a small bowl, whisk vinegar, salt, and pepper until salt dissolves.

Gradually whisk in oil. Taste and adjust seasoning if needed.

Whisk again before using.

Recipe makes 1 cup.

About Wine Vinegar

Wine vinegar can be made from either red or white wine. Red wine vinegar is widely used in the Mediterranean countries; in fact, it is a common staple in most French homes. The longer the vinegar matures, the better it is.

White wine vinegar is a somewhat tangy vinegar French cooks use most frequently in Hollandaise and Bearnaise sauces, vinaigrettes, soups and stews.

White wine vinegar also makes a great base for homemade fruit and/or herb vinegars.
