Blue Cheese Vinaigrette

Blue Cheese vinaigrette lowered in calories and fat by substituting chicken broth for half the olive oil.


1/4 cup olive oil
2 teaspoons white wine vinegar
1/2 teaspoon Dijon mustard
2 tablespoons crumbled blue cheese


Whisk together oil, vinegar, mustard, cheese and pepper to taste in bowl.

Note: For a calorie and fat reduced version of blue cheese vinaigrette, substitute 2 tablespoons chicken broth for half the olive oil.

Recipe makes 1/2 cup.

Extra: Blue Heaven Dressing

In a small bowl, combine 1/2-cup buttermilk, 1/4-cup each low-fat mayonnaise, reduced-fat sour cream and crumbled blue cheese, 1-tablespoon each minced garlic and minced scallions, and 1/8-teaspoon cayenne pepper; mix well. Chill one to four hours.

Blue cheese is a general classification of cow's milk and/or goat's milk cheeses with a blue or blue-green mold. The blue mold in these cheeses is due to mold spores. Today most blue cheeses (bleu cheese) are either injected with the mold, as with Roquefort, or the mold is mixed right in with the curds, as it is with Gorgonzola, to insure even distribution of the mold.
